Lentil Burgers
Makes 8 burgers
1 cup dry lentils, rinsed 2½ cup water ½ teaspoon salt 1 tablespoon oil ½ medium onion, diced 1 medium carrot, diced |
½ teaspoon pepper ½ teaspoon garlic powder 1 tablespoon soy sauce ½ cup rolled oats, finely ground ½ cup bread crumbs, one slice of wheat bread ½ cup cornmeal |
Place the lentils, water and salt in saucepan, bring to a boil while stiring, lower heat, cover and simmer Sauté the onion and carrot in oil until soft, about 5 minutes. Mix the lentils, onion, carrot, pepper and soy sauce in a large bowl. Mix in the oats, bread crumbs and While still warm, form the lentil mixture into patties. These can be frozen, refrigerated (for up to 5 days) Cooking (2 possibilities)

Oatmeal Raisin Cookies
Makes 40 cookies
½ cup packed brown sugar ½ cup white sugar 2 cups unsweetened applesause 3 tables olive or canola oil 2 teaspoons vanilla 1 cup wheat flour 1 cup all-purpose flour 2 teaspoons baking powder |
1 teaspoon salt 2 teaspoons cinnamon 1 teaspoon ground cloves 1 teaspoon ground allspice 2 cups rolled oats 1½ cups raisins ½ cup chopped walnuts or ½ cup raisins |

Whole Wheat Bread
Makes 2 loaves
¼ cup warm water 1 teaspoon white sugar 1 tablespoon active dry yeast 1½ cups soy milk 1 cup hot water 3 tablespoons olive or canola oil ½ cup rolled oats |
¼ cup molasses or honey 2 teaspoons salt 1 teaspoon cinnamon (optional) 2 cups bread flour 2 cups whole-wheat flour 2 cups all-purpose flour |
Combine ¼ cup warm water with the sugar and yeast in a small bowl and set aside until foamy, about 10 minutes. In a mixing bowl, combine 1½ cup milk, 1 cup hot water, oil, molasses/honey and salt. Mix in the yeast and oatmeal. Push the dough down, then turn it out and divide it in two. Form two loaves and set them in oiled or sprayed Remove the covering, set the oven to 325° F (160° C) and bake for 35 minutes or until well browned. Remove loaves from pans, place on rack to cool and brush the tops with your favorite bread spread. May be frozen. |
Spaghetti
Makes 8 servings
1 lb spaghetti 2 24 oz jars of pasta sauce 2 28 oz cans of vegetarian baked beans 1 13.5 oz can of mushroom stems and pieces |
Cook spaghetti according to package directions. Heat remaining ingredients. |
Peanut Raison Bird Cake
Makes 1 cake
2 cups shelled, unsalted peanuts 2 tablespoons corn meal ½ cup raisons |
Process peanuts and corn meal in food processor until smooth. Add raisons and process until the mixture clumps. Place in mold. (a plastic suet package can be used) Freeze |
